Amlana | Tamarind water spiked with dark salt


Amlana is a tasty starter that could be served alongside a feast or at whatever time of the day as cooling refresher in the hot desert summers.

Sweetened tamarind water spiked with dark salt,pepper and cardamom powder. Serve this beverage finished with a lot of ice 3d squares to completely appreciate its sweet and tart flavors.

Elements
  • 2 tbsp tamarind (imli)
  • 8 to 10 tbsp powdered sugar
  • 1/4 tsp pepper powder
  • 1/4 tsp cardamom (elaichi) powder
  • 1/2 tsp dark salt (sanchal)
  • salt to taste
  • 3 glasses chilled water
  • ice-blocks, to serve

For the enhancement
  • 1 tbsp slashed mint leaves (phudina)

Technique
  •  Soak the tamarind in 1 glass of water for approx. 2 hours. Squash the tamarind and strainer the mash through a muslin material. Press out all the tamarind mash.
  •  Add the sugar,pepper powder,cardamom,black salt,salt and 3 glasses of chilled water and blend well.
  •  Serve chilled,garrnished with the slashed mint leaves and finished with ice blocks.
