Avail ( South Indian Recipe )

Avial is a dish that began in kerala, yet picked up an equivalent ballyhoo in tamilnadu also. Extraordinary is the wedding or merry menu that does not incorporate avial!

The way to making phenomenal avial is to give careful consideration to the visual bid – vegetables with differentiating shades, for example, carrot, beans, pumpkin and so forth are picked, cut equitably into flimsy 1 inch long pieces, and cooked to a crunchy consistency. Assuming that you've done this, you've crossed a large portion of the extension effective.

Elements

  • To Be Ground To A Smooth Paste
  • 3/4 container naturally ground coconut
  • 1 tsp cumin seeds (jeera)
  • 4 green chillies , harshly hacked
  • 1/4 container water

Different Ingredients

  • 1/2 mug drumsticks , cut into 25 mm. (1") pieces
  • 1/2 mug long french beans , cut into 25 mm. (1") pieces
  • 1/2 mug carrots , cut into 25mm (1") pieces
  • 1/2 mug yam (suran) , cut into 25mm (1") pieces
  • 1/2 mug red pumpkin (bhopla / kaddu) blocks
  • 1 crude banana , peeled and cut into 25 mm (1") pieces
  • 1/2 mug crisp green peas
  • 1/2 mug brinjal (baingan / eggplant) blocks
  • 1/4 tsp turmeric
  • salt to taste
  • 1/2 glass crisp curds (dahi) , demolished (discretionary)
  • 2 tbsp coconut oil or whatever available refined oil
  • 1 tsp cumin seeds (jeera)
  • 7 to 8 curry leaves (kadi patta)

Technique


  •  Combine the drumsticks with ¼ glass of water and blanket and cook on a medium fire till they are half done.
  •  Add the remaining vegetables, water if obliged and salt, blend well and blanket and cook on a moderate fire work the vegetables are delicate (approx. 12 to 15 minutes).
  •  Add the arranged glue and ¼ container of water, blend well and stew for 12 to 15 minutes or till it gets to be semi-dry. Uproot off the fire.
  •  Add the curds, oil, cumin seeds and curry leaves and stew for 2 to 3 minutes. Serve hot.
