Fixings
- 2 expansive potatoes, bubbled and peeled
- 1 tbsp margarine
- For the paneer filling
- 1/2 glass ground paneer (curds)
- 1/2 tsp cumin seeds (jeera)
- 1/4 tsp asafoetida (hing)
- 1 green bean stew, hacked
- 2 tbsp slashed coriander (dhania)
- 2 tbsp slashed mint leaves (phudina)
- 1/2 tsp dark salt (sanchal)
- 1 tbsp oil
- salt to taste
Technique
For the paneer filling
- Heat the oil and include the cumin seeds and asafoetida.
- When the cumin seeds crackle, include the green bean stew, paneer, dark salt, salt and blend well.
- Add the coriander and mint and blend well. Keep aside.
Step by step instructions to move ahead
- Cool the potatoes totally. Cut each into 2 equivalent amounts of and scoop out the focuses leaving a vacant shell.
- Fill in the paneer mixture and sauté the potatoes in margarine work the outside is daintily sautéed.
- Place every half on a serving plate and top with the sev and green chutney.
- Serve quickly.
